Where Does Beef In Japan Go?
Recently released figures by Japan’s Agriculture Ministry have revealed the distribution channels for beef in Japan. A total of 934,960 tonnes of beef was estimated to have been consumed in Japan in 2003, with 34%, or 317,886 tonnes consumed at retail level. 57%, or 532,937 tonnes, were estimated to have been sold through foodservice, while 9%, or 84,146 tonnes, was estimated to have been sold as processed beef.
Chilled grainfed beef is predominately sold at retail, with foodservice taking a wider range of beef types, from chilled grainfed to frozen grassfed beef, depending on the type of foodservice outlet. The processed market is dominated by secondary cuts and frozen product.
Of the processed beef market, an estimated 14,677 tonnes is thought to be used in ham sausage, 23,483 tonnes in hamburgers, 1,957 tonnes used in canned beef, 8,806 tonnes in retort packs, and 26,418 tonnes to be in frozen foods, with the remaining 8,806 tonnes comprised of miscellaneous items.
