Where Does Beef In Japan Go?



Recently released figures by Japan痴 Agriculture Ministry have revealed the distribution channels for beef in Japan. A total of 934,960 tonnes of beef was estimated to have been consumed in Japan in 2003, with 34%, or 317,886 tonnes consumed at retail level. 57%, or 532,937 tonnes, were estimated to have been sold through foodservice, while 9%, or 84,146 tonnes, was estimated to have been sold as processed beef.

Chilled grainfed beef is predominately sold at retail, with foodservice taking a wider range of beef types, from chilled grainfed to frozen grassfed beef, depending on the type of foodservice outlet. The processed market is dominated by secondary cuts and frozen product.

Of the processed beef market, an estimated 14,677 tonnes is thought to be used in ham sausage, 23,483 tonnes in hamburgers, 1,957 tonnes used in canned beef, 8,806 tonnes in retort packs, and 26,418 tonnes to be in frozen foods, with the remaining 8,806 tonnes comprised of miscellaneous items.

Beef if good, though I really wish they would trim at least some of the fat off. Here in Japan they seem to enjoy eating it, and I get glared at if I don't. I guess the theory is that you payed for it, so you should eat it.

Speaking of beef, I smell yakisoba being cooked. Dinner time!

I liked steak, before I had encountered the scary cafeteria foods at the college dormitories, where they fed you, once a week, this dried piece of carcass that must have been driven in a stampede all the way from Texas, tasted like cardboard painted to look like a steak, and you could only take one per customer. Those college football athletes bartered with us regular students to take our allotted one piece of cardboard steak and hand it to them, so they could scarf down the 20 or so slices of this wasted piece of carcass that nobody in their right mind would have paid for at any two-bit restaurant.
Haven't had a taste for Steaks since then, but I still like the gyudon at the Yoshinoyas....when they were still available there :D
