Hello I was just wondering could someone give me a list of Japanese cookbooks to pick up that has real authentic recipes not just Americain/Japanese hybrid dishes? Thanks

Japannese cooking : a simple art / shizuo Tsuji.
The Japanese kitchen /Hiroko Shimbo.
Also, a few web sites.
"Japannese cooking : a simple art / shizuo Tsuji" is a good book.
It has a whole section of introduction of ingredients, utencils, methods and technique of cooking. It has a meal plan for each season and many authentic recipes.
