I don't think that the true story of Yakuza can be described in terms of movies. I sometimes see Yakuza guy walking wearing a jacket in such hot days. In a recently published book mentioned about a major organization, I could find nothing special. Almost all of it comes from interviews which was done to the boss by the authour early in the '90s.

How about this flick, "Tokyo Drifter" from 1966. Read old school stuff about a handsome gangster who tries to go straight but keeps getting pulled back into the Yakuza turf wars. I watched it once and thought it was cool!

In any prison here in Japan, their keepers classify them into about 10-20 groups along the results of aptitude tests. Each group is assigned a work like a printing, a laundering, a metal molding and anything else. Any of Yakuzas is classified by what organization he belongs to. From books I read (ok?), Yakuza members and non-yakuzas are made to be quite different groups so as not that the knowledge which Yakuzas have should not infect non-yakuzas. I think the best work for yakuza is a laundering.
