Hi there, I was in Fukuoka a couple of weeks ago and had a delightful radish and cod roe salad with some little dry fish in it in a restaurant. Does anybody know the recipe of this? That would be wonderful!:wave: :wave:

A recipe is simple.
MENTAI-KO (seasoned cod roe) and the mayonnaise are mixed.
It is mixed with the salad.
大根の明太サラダ (MENTAI salad of a Japanese radish)

INGREDIENTS
1.Japanese radish 500g (1/2)
2.Salt 200g
3.Seasoned cod roe 60g
4.Mayonnaise 120g
5.Tofu 1/3 orders
6.Black pepper
HOW TO COOK
(1)
It cuts a Japanese radish to length of six or sevencm.
I add salt.
I rub it at a stretch.
(2)
After there be it to a colander immediately, and washing off salt by a current well,I squeeze it well.
(3)
I put mayonnaise / MENTAIKO / tofu in a bowl and mix it.
(I smash tofu without draining water off it.)
(4)
I add a Japanese radish before eating.
I mix it well.
I wave black pepper from the top
It is difficult to cook though MENTAI-KO (seasoned cod roe) is sold in Japan.

OH Thank you! That sounds exactly like the salad I had! :cool:
I will try this immediatley .... if I can find anything like seasoned cod roe in the East Midlands (UK)! If you ever need a recipe for a German, French or English cake or pie just ask, I love doing pastry so I got lots of recipes!
