I have a disease called celiac diease. Which means I cannot eat any products containing wheat rye, barley, spelt, and kamut. :p This also usally includes soy sauce becasue almost all of it is fermented with wheat. I have found here in NY that almost every Japanese eatery (correction all that i have been to) cook with soy sauce that contains wheat. So my question is what dishes in Japan could i get that dont contain soy sauce (or udon or soba (unless its 100% buckwheat which it usally isnt). What dishes would still be good if i ordered them weith no sauce? Is there any other types of sauces that are made commonly that doent conatin soy sauce?

For the soy sauce substitute, use fish sauce such as nam pla or nouc mam.
If you're a veggie, try to find soy sauce made of rice for allegic people, though I assume it is rather hard to find one in your country.

You may get more ideas if you tell what you usually eat at home.

NYC is the ideal place to cook Japanese food, for the tapping water in NY is as soft as in Japan.
To make good dashi soup, soft water is a must.

You are going to have allot of trouble avoiding gluten in Japan - I know several people who were strict vegetarians who have given up for the fact that avoiding something simple as meat is close to impossible.
