I have been teaching Esl for 4.5 years now. I worked in Nara for 2yrs and Taiwan for 2.5. I may be moving to Tottori because my wife maybe getting a good job with the Gov.

I Dont want to sign a 40hr contract because I just would feel completely underpaid after working in Taiwan.

Basically I want to earn enough money for food and expenses for my wife and I so that we can save all here earnings. I had a contract with Geos last time I lived in Japan so I never really found out what other opportunities and pay was like.

Would is be possible to find kindergarten work during the day of say 4-6 hrs? and maybe get some privates?could I earn enough?

I plan on training a lot of MMA (mixed martial arts) while there. So if anyone knows whats available there. Please pass it on. I found a Purebred Gym there, so that is one option.

I will be there on a spouse visa most probably.

"Most probably" on a spouse visa? Well, you'd better make up your mind, because you can't get sponsored for a work visa with only part time employment.

Private lessons are up to you. I can't say whether Tottori has enough of a population interested (and available). I certainly wouldn't plan to live on them and PT work.

Use the iTownpages (Internet phone directory) to see what is available in any city.

I gave wrong information. I meant dependent visa. I will have to apply for working hours. I think 20 hrs they allow.

If your spouse is Japanese, it is a spouse visa.
If your spouse is non-Japanese, it is a dependent visa. And, yes, you will have to apply for special permission to work, which will only be part-time.

What's more, be careful how much income you declare. Make more than roughly 1.1 million yen/year, and you cannot be claimed on your spouse's taxes as a dependent.
