Hi, I am one of the receiver of this year Monbukagakusho Scholarship, and currently searching for university that have a good undergraduate Food Science program.
Can anyone give me some reference or suggestion? Any help would be appreciated, thanks.

At our university we do have a school of nutrition science, although I'm not sure if it would fit quite as close to what you may want in the way of Food Science. I can ask some of the professors there what they might think.
Anyway, just in case, (and it'd be a good chance to exercise your Japanese (because the machine English translation page is not good at all) here's the link to that homepage:

Actually ... the Nutrition in the university is a good system ..
but not good enough because you don't know what's happen in the kitchen
e.g ... the cook may be his hand is dirty ...
so best way to eat in Ur home ...
