ミニーちゃんは不在でした
I can figure out that it's
Mini-she's (something) beneath maybe?...
maybe Mini-she's missing her friends?
it's a message I'm trying to work out about about Mini Mouse.
Please help me out! :)

It means she was absent.
Ah!... I see!... she was empty!!!... it was about a mini the mouse mailbox! domo!:)

my understanding of these Japanese characters is pretty pathetic for now... but I'll get there!

Yes, "Fuzai" means absent or not to be there!
"Fu" means denial, and "Zai" means existence or being. And "Fuzai" means absent or not to be there.:note:
