Please excuse my grammatical errors, I'm not very experienced. Just looking to maybe have a simple conversation in Japanese

May I correct your sentences a little bit.

わたし わ かく が しらない です。
わたし は かく こと が しらない。OR しりません。
I assume you want to say that you cannot write very well. KAKU is the verb meaning TO WRITE. And KAKU KOTO means the action of writing. Never use DESU after the negative form.

わたし の なまえ は JOE です
Tha's perfectly fine.

そして わたしわ にほんご が べんきょう する。
そして わたしは にほんご を べんきょう して います。
If you are a beginner, no need for you to worry about the particles. You will learn in due course. SHITE IMASU is just showing a continuing action. SHITE is the TE form of SURU.

Please don't be afraid of a failure and write Japanese again. Communicate with foreigner is the best way to learn a foreign language!
And I correct your sentences a little bit too.

「この でんごん は わたし の だいいち これ です」
「この でんごん は わたし の さいしょ　の でんごん です」

"だいいち" and "さいしょは" are the same meaning. But "さいしょ" is more natural in this case.

Hi Kalyani, your Japanese is very good too! I find error only one passage but it is very small.

「わたし わ かく が しらない です」
「わたし は かく こと が しらない。OR しりません」

In this case,「わたし は かく こと を しらない。OR しりません」is more natural. And 「わたし は かきかた を しらない。OR しりません」is the best expression.
