の:助詞
子供: child
が:助詞
姿:すがた:shape
を:助詞
変えた:past tense of 変える, to change. 一段 verb.
The children of Letis changed shape.

この: this
神鳥: divine bird
の:助詞
たましい:魂: soul
を:助詞
使えば:使う to use, conditional.
If you use this divine bird's soul.

「空を自由飛ぶことが できるのね。」
"It's possible to fly freely in the sky"
空:そら;sky
を:助詞
自由:じゆう;freedom. I find that a better translation would be: "as it suits you".
に:助詞
飛ぶ:とぶ:to fly, 五段 verb.
こと:nominalizer
が:助詞
できる:to be able
のね:ね

This is the part I want to focus on more.
空 is the direct object (を) of the rest of the clause: 自由に飛ぶこと.
に is a frequently used 助詞. According to A Dictionary Japanese Particle:
1: Precedes verbs which indicate the existence of people or things in a certain place, or which shows direction, movement or action.
2: After a noun, indicates the direction or the destination of an action.
What I find more challenging is to determine the relationships of the particles when there's a series of them.
自由 is described as a noun/な-adjective so it would fit for (2)
Considering that 飛び is a verb (although it's nominalized by こと), so (1) would also apply, especially the part in bold.
Regardless, the clause is fairly clear that "it's possible to fly freely in the sky" even with a specific understanding of に from a linguistic/grammatical perspective.

Either way, the objective here is to familiarize as opposed to having a clear cut, lucid understanding. The role of に will become more practically understood as it's repeatedly seen in an authentic written environment. I wouldn't say that being able to pinpoint the functional definition of each instances of に is necessary here. I'm under the impression that a loose grasp on the particle should probably be enough.
