From my observations so far, it seems like 傾げる is used solely with 首, while 傾ける is used with any other object, both physical and abstract like 注意. Could someone point me to an explanation of their difference?

Be aware that writing 傾げる is ambiguous. It can be read as かしげる or かたげる. I assume you are asking about かしげる since that is far more common.

I was asking about かしげる. But now that you mention it - i'm curious, in which way かたげる is ambiguous?

傾げる is ambiguous because it can be read as かしげる or かたげる, but you can usually assume that it's かしげる, because かたげる is obsolete.
